Healthy Taco Turkey Burrito Bowls – Nothing beats a flavorful, healthy bowl of brown rice topped with lean ground turkey, homemade pico de gallo, corn, mexican shredded cheese, and sliced avocado.
My husband and I just can’t seem to get enough of these taco turkey bowls. Mexican food has always been (and probably always will be) a staple in our home. Now I wouldn’t call this authentic Mexican food but it’s somewhere along the lines of a Chipotle bowl for a better reference. I’ve decided to incorporate extra lean turkey into this dish to boost nutritional benefits. If you’re not too fond of turkey, you can swap it with ground beef or ground chicken. Also, white rice can always be substituted for the brown. Enjoy!

Healthy Taco Turkey Burrito Bowls
Ingredients
- 1 cup brown rice
- 2 pounds extra lean ground turkey
- 1 1/2 tbsp taco seasoning
- 1 (15oz) can corn
- 3 tomatoes
- 1/2 red onion
- 2 limes cut into wedges
- 2 avocados
- 1/2 cup Mexican blend shredded cheese
- 2 tbsp olive oil
- handful cilantro chopped and divided
Instructions
- Cook rice according to package directions; set aside.
- Heat olive oil in a large skillet over medium/high heat. Add ground turkey and taco seasoning. Break apart the turkey as it cooks, about 6-7 minutes.
- While the turkey is cooking, prep the pico de gallo. Dice tomatoes and red onion. In a medium size bowl, combine tomatoes, onion, pinch of cilantro, and a squeeze of one lime wedge.
- Divide all ingredients evenly among 4 bowls. Start with rice, then turkey, corn, pico de gallo, half of an avocado, sprinkle with cheese and cilantro, serve with lime on the side.
