Peach, Burrata, And Prosciutto Salad
Simple, fresh ingredients like seasonal peaches, burrata, prosciutto, basil, and olive oil are arranged together to bring one of the best and easiest summer time salads ever! (Jump to Recipe)
Seasonal peaches are cool. And sweet. BUT burrata. This is my bread and butter. THIS is what puts the skip in my step. If you have never had burrata in your life, my, you are missing out. Get on the burrata train today! Most grocers sell it. Not all though. My local Raley’s and Trader Joe’s both carry it. It can be found next to the mozzarella cheese and comes in a container with a salted brine.
It’s an Italian cow milk cheese made from mozzarella and cream. The outside is solid mozzarella, while the inside is like a soft, creamy baby mozzarella. Now you know why I speak highly of it. It really is the best stuff ever. Especially when it’s paired with something sweet like sliced peaches and salty thin slices of prosciutto.
Make this Italian-ish salad with me..
You’ll need:
2 peaches – make sure they’re ripe and just a bit soft to the touch, not rock hard.
8 oz burrata ball of cheese – sometimes they are sold in two 4 oz ones, those will work just fine.
4 oz thinly sliced prosciutto – you can also cut these in half if you like them a bit smaller in size.
Handful of fresh basil – leave them as whole leaves or slice them, it’s a preference thing.
Some good ol’ quality extra virgin olive oil – My favorites are Brightland and Kosterina.
Put all of the ingredients on a large serving platter in a pretty arrangement, drizzle with olive oil (and balsamic vinegar, optional) and give it a sprinkle with some fresh cracked black pepper.
Have it for lunch as is or serve it alongside with Lemon Parmesan Chicken And Orecchiette, Spaghetti With Light Cherry Tomato Sauce, or Penne Pasta Bake.
