Strawberry Balsamic Basil Brie

I know I’ve been sharing TONS (<–that’s an understatement) of summertime appetizers (in particular, crostini and things with peaches..). I cannot get over the freshness of this seasonal produce. From all my peach-buying years, this year went through the roof.
Obsessed doesn’t even begin to describe it.
When I flipped my desk calendar to this month, there’s a date that reminded me, summer is almost over, fall is on the horizon, along with.. the peaches will soon disappear and no more soft, heavenly baked peach pastries or peach burrata salads. And so the peach buying madness continues.
On the flip side, strawberries are available ALL the time. Enter, sweet and tangy strawberry balsamic basil creamy brie. I first seen it from Jennifer Pallian’s (@foodess) page and it was love at first sight.
You only need a few strawberries for this one (like half a pack/ 8-10 medium sized strawberries), some fresh basil, a splash of balsamic vinegar and olive oil, brown sugar, and a pinch of salt. It’s all tossed together and spooned over a brie wheel. It’s best served with crackers or a crostini and if you want to go the extra mile to make this special for someone (mostly yourself) serve it on a board with fresh fruit, chocolate, and nuts. Strawberry Balsamic Basil Brie
Ingredients
- 1/2 cup diced strawberries
- 1 1/2 tsp olive oil
- 1 tsp balsamic vinegar
- 1/2 tsp brown sugar
- 1 tbsp fresh basil, sliced
- pinch of salt
- 8 oz brie wheel
Instructions
- Combine all ingredients in a medium bowl and stir together. Spoon over chilled brie and serve with your favorite cheese board additions.
