Tropical Fruit Salad
This Tropical Fruit Salad is refreshing, vibrant, and full of flavor and Vitamin C! Oranges, apples, pears, cantaloupe, pineapple, and mint are all tossed together and coated with a squeeze of lemon juice.
Last week, as we were sitting in the Barcelona airport ready to fly back home, my husband hands me a clear container filled with fruit salad that he’d just bought. He couldn’t wait to get home to start detoxing with a proper diet from all those chocolate churros we consumed. He had to start there and then. And of course, I had to start with him.
Surprisingly, it was fresh and super yummy. I underestimated it. I thought to myself ‘Why don’t I ever make this’? So I jotted the ingredients down and this was the first thing I threw together when we got home.
I diced all the fruit into about 3/4- inch to 1-inch cubes here. You may dice them into smaller cubes if that is your preference, it will require a little bit more work and some patience.
This Tropical Fruit Salad is a great snack in between meals, as a side dish, or even for breakfast over a bowl of greek yogurt with a drizzle of honey.
Let me know in the comment section below for any additional ways you may have used it. I’d love to hear from you!
