Turkey Corn Chowder
Thanksgiving is almost here! It’s that day we’ve all been waiting for where we eat a ton of food and lay around watching Home Alone. I’m sure it’s going to be a busy week for most of you having to prep for the holiday, meaning not much of you will be cooking after the weekend but more like recovering.
I’ve come up with this easy one-pot recipe that includes leftover turkey and comes together in a total of 30 minutes.
If you don’t have any leftover turkey on hand, swap it with cooked shredded chicken and enjoy it all year round!

TURKEY CORN CHOWDER
Ingredients
- 2 tbsp olive oil
- 2 ribs celery sliced
- 1 onion diced
- 2 carrots diced
- 1 red pepper diced
- 3 cups chicken broth
- 2 cups red potatoes diced into small cubes
- 3 (15oz) cans of cream of corn
- 1 teaspoon chili powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon ground pepper
- pinch of red chili flakes optional, leave out if you don’t like the extra heat
- 3 tbsp brown sugar
- 1 pound or 1 1/2 cups of shredded turkey
- 1/2 cup half and half
Instructions
- Heat olive oil in a pot over medium heat. Saute the celery, onion and carrots until soft, about 3 mins.
- Add the red pepper to the pot and continue to saute for about 2 more minutes.
- Add chicken broth, diced potatoes, cream of corn, chili powder, Italian seasoning, red chili flakes(optional), brown sugar, salt, and pepper to the pot. Bring to a boil. Cover and simmer on medium/low for 20 mins.
- Add shredded turkey and half and half. Stir until half and half is well incorporated and heated through, about 2 mins.
- Serve.
