Garlic Butter Shrimp

These garlicky butter shrimp can be put together and on the table in 15 minutes tops! Make sure you have an entire baguette ready to be devoured as you will want to dip it into the broth. The shrimp cook so quickly you must be careful to not overcook them or they get tough and chewy. Preferably 2-3 minutes per side. At the end, top it off with chopped parsley and you’re ready for a restaurant kind of meal!

Ingredients

  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 1 1/2 pounds large raw shrimp shelled, tail on
  • 1/3 cup chicken broth
  • 6 cloves garlic minced
  • 1 bay leaf
  • 1 baguette sliced
  • 1/4 cup dry white wine
  • 1 tbsp sherry vinegar

Instructions

  • In a large skillet, heat the oil and butter over medium heat. Season the shrimp with salt and pepper and add to the skillet. Add chicken broth, garlic, and bay leaf. Cover and cook for 5 minutes, stirring in between.
  • In the meantime, toast the sliced baguette in a toaster or over the stove. (I toasted mine over the stove on a grilling pan).
  • When the shrimp are done cooking, add wine and sherry and cook until alcohol has evaporated, about 1-2 minutes. Sprinkle with parsley and serve with toasted baguette.
