Lobster Mac And Cheese

Mac and cheese, yum. But lobster mac and cheese? Double yum!! When cooking up this creamy and gooey, rich pasta dish, your kitchen will begin to smell like one of those fancy seafood restaurants located on a pier. One of those where half the things on the menu are seafood and/or pasta. I don’t believe there really is a better combo.

Comfort food has a special place in my heart. This is the reason why I fell in love with cooking in the first place when I got married. Now we enjoy it in moderation around here, for the sake of our health and metabolism, but when we do comfort food, we do it the right way. And by the right way, I mean lobster mac and cheese.

I’m talking cheesy, gooey sauce made with white cheddar, gruyere and parmesan, thrown together with tender chunks of lobster meat and elbow macaroni, assembled into a baking dish then topped with buttery bread crumbs and baked to golden crisp top perfection. Pretty darn spectacular, indeed.

To Make This Lobster Mac And Cheese:

Start with your choice of lobster meat. Here, in this recipe, I used a combination of 2 lobster tails and 1 claw. After I cooked the lobster and removed the meat, it came out to about 1 1/2 cups of lobster meat. This is the perfect ratio for 1 pound of pasta. With every bite, you are sure to have pieces of lobster. Feel free to add more or less to your liking. (Langostino tails would be another great option for this recipe, they are cost effective and can be found in most grocery stores. I’ve previously purchased some from Trader Joe’s in the freezer isle).

There are several ways to cook the lobster. It can be baked for about 10-14 minutes in the oven on a baking sheet. Another way is to boil it in a big pot of water, which was more simple for me and so that’s the route I went with. I boiled it for 10 minutes, removed it from the pot, set it aside to cool before removing the meat from the shell.

Cook the extra large elbow macaroni according the directions on the package, drain it and rinse with cool water to stop it from cooking, set it aside.

To make the three-cheese sauce, melt a generous dose of butter in a large pan. Add a sprinkle of butter and whisk for about 2 minutes. Next, slowly add the milk in 1/4 cup increments while whisking at the same time. This is going to create a creamy base for the cheese sauce. Adding the milk too quickly at once can create flour lumps in the sauce.

Add in salt, pepper, and paprika to the creamy sauce. Give it a good stir. Add the three cheeses to the sauce and mix until it’s completely melted. Add in the lobster meat and pasta, give it another stir until everything is incorporated well.

Transfer the lobster mac and cheese to a baking dish or an oven proof skillet.

Combine bread crumbs and melted butter in a dish so they are all buttery. Spread them across the top of the lobster mac and cheese dish. Place into the oven and bake for 18-22 minutes, until the top golden and smells like a piece of heaven! Get ready. You’re life will never be the same.

Ingredients

  • 1 pound large macaroni
  • 6 tbsp unsalted butter, divided
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • 1 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1/4 tsp paprika
  • 2 cups white cheddar, shredded
  • 2 cups gruyere, shredded
  • 1/2 cup Parmesan, shredded
  • 1 1/2 cups cooked lobster meat
  • 1/2 cup panko breadcrumbs
  • parsley, for garnish (optional)

Instructions

  • Preheat oven to 375 degrees F. Cook pasta according to package directions. Drain and rinse under cold water to stop cooking. Set aside.
  • Melt 4 tbsp butter in a large skillet over medium heat. Add flour to the skillet and whisk for 2 minutes. Slowly add milk in 1/4 cup increments while whisking at the same time. Add salt, pepper, and paprika and stir until combined.
  • Add cheddar, gruyere, and Parmesan to the skillet and stir until completely melted. Add lobster meat and pasta to the skillet and stir until well combined. Transfer to large baking dish or oven proof skillet.
  • Combine bread crumbs and 2 tbsp of melted butter in a small bowl. Spread across the top of the lobster mac and cheese. Place into oven and bake for 18-22 minutes, until the top golden. Let cool 5 minutes before serving. Garnish with parsley.
