Peach, Burrata, And Prosciutto Toast

Aside from all the lavender iced lattes and Whole Foods prepackaged salads with rotisserie chicken, this peach, burrata, and prosciutto toast is exactly what I needed this weekend. It’s an easy, no-cook kind-of-lunch that gets you through the hot summer in a breeze.

To Make This Simple Toast, You’ll Need:

Burrata – This is an Italian cow milk cheese made from mozzarella and cream. The outer casing is solid cheese, while the inside contains stracciatella and creaml. It has a beautiful soft and creamy texture. It can be found in the cheese section next to the mozzarella. Trader Joe’s has burrata for a reasonable price. This past week, I had a hard time locating it so I went with a buffalo burrata from Whole Foods and it was equally creamy and delicious!

Peaches – Local, seasonal, amazingly sweet yellow peaches. I am loving the yellow ones for the color but the white peaches will work well too. Taking in as much as these as I can because I know in a few short months they will be off the shelves and gone until next year.

Prosciutto – Thin sliced, prosciutto is salty and so delicate. It pairs perfectly with sweet peaches.

Bread – Thin slices of bread of your choice. I’m using basic white bread slices from a medium loaf of bread from TJ. I love to get them barely toasted so it has that crunch when I bite into it.

Honey – Any kind of honey will get the job done.

Basil – Fresh basil leaves, whole or torn leaves for garnish.

Sea Salt

Try It With A Few Variations

Swap honey with balsamic vinegar or balsamic glaze.

Thyme works so well also (in replacement of basil).

Try it with crispy prosciutto. Just crisp it in a skillet for a few minutes.

Swap the peaches for sliced strawberries.

If you’re having a hard time locating burrata like I did this week, try it with ricotta. Whip it for extra brownie points.

Grilled peaches instead of regular peaches. (This is what I’m trying next!)

Variations can be endless, put your own twist on it and enjoy!

Ingredients

  • 4 slices bread of choice, lightly toasted
  • 8 oz burrata cheese ball
  • 2 large yellow peaches, sliced
  • 4 slices prosciutto
  • 8-10 fresh basil leaves
  • 1 tbsp honey
  • pinch of sea salt

Instructions

  1. Lay out the toasted bread slices.

  2. Divide and spread the burrata among the four toast slices.

  3. Layer the peach slices on top of the burrata.

  4. Fold each prosciutto slice into a ribbon and layer on top of the peach slices.

  5. Garnish with fresh basil leaves, a drizzle of honey, and a pinch of sea salt. Serve immediately.
