Prosciutto And Fig Goat Cheese Pizza
Tangy goat cheese, sweet sliced figs, and thin slices of salty prosciutto are layered on a pizza dough, baked, and last drizzled with sweet honey and thyme.
Jump to RecipeFigs to me, are know to be one of those ‘end of summer/beginning of fall’ fruits. They are a total treat, so yes, we are putting them on a pizza today, along with goat cheese and prosciutto. One of the best parts is that it’s drizzled with sweet honey and thyme to bring out more of those sweet and salty flavors we’re going for.
Pizza Dough:
Easy way: buy a fresh pizza dough from the grocery store in the refrigerated section.
Better way: make your own.
The toppings are the gold here.
Toppings:
3 main toppings – creamy soft goat cheese (absolute yum), sweet ripe figs (black preferably), and salty, thin-cut prosciutto.
Drizzle:
Honey, minced thyme, and lemon juice are mixed together to add more pungent flavor when the pizza comes out of the oven.
The lemon juice thins out the honey consistency and makes it more silky and easier to drizzle on the pizza. Another option would be to use white wine vinegar in replacement of lemon juice if you don’t have any on hand.
If you’re not a fan of honey in general, leave the drizzle out or use a balsamic glaze instead.

Prosciutto And Fig Goat Cheese Pizza
Ingredients
Pizza Dough
- 3/4 cup warm water
- 1 1/4 tsp active dry yeast (or half of a packet)
- 1 tsp sugar
- 2 cups all-purpose flour or bread flour
- 1 tsp salt
- 1 tbsp olive oil
Pizza Toppings
- 1 tbsp olive oil
- 2 oz goat cheese, crumbled
- 6 figs, thinly sliced
- 4 thin slices of prosciutto
- 1 tbsp honey
- 1 tsp fresh thyme, finely chopped
- 1/2 tsp lemon juice or white wine vinegar
Instructions
Make The Pizza Dough
- Combine the warm water, yeast and sugar in a small bowl. Put the bowl in a warm, not hot or cool, place until the yeast is bubbling and aromatic, at least 10 minutes.
- In the bowl of a mixer fitted with a dough hook, combine the flour, salt, olive oil and the yeast mixture on low speed until the dough has come together. Increase speed to medium/high and continue to knead for 8-10 minutes on a medium speed until it becomes smooth and forms a ball on the hook.
- Coat the inside of a large bowl lightly with olive oil and transfer the dough to the bowl. Cover it with a kitchen towel or plastic wrap and put it in a warm place until the dough has doubled in size, about 1 hour.
Assemble The Pizza
- Preheat oven to 475 degrees F. If using a a pizza stone, place into the oven as it preheats. If using a large sheet pan, line with parchment paper, set aside.
- Punch the dough down. Drizzle dough with 1 tbsp olive oil, turn the dough over to coat all sides. Working on a clean surface, begin stretching and pulling the dough into a rectangle or circle (your preference). Keep stretching the dough until you get a 14-inch diameter circle or a 6×14 rectangle, transfer to baking sheet or preheated pizza stone.
- Layer pizza dough with goat cheese, figs, and prosciutto. Sprinkle with salt. Place into oven and bake for 12-16 minutes or until the edges of dough are golden.
- While pizza is cooking, combine honey, thyme, and lemon juice. Drizzle the pizza once it's done, slice and serve.
