Quick & Easy Mini Pizzas
These pizzas were particularly fun to make because first, it’s pizza, and second, you get to add whatever you want. I like to think of it as a blank canvas for experimenting. You can make it as simple as a cheese pizza or load it with your top 10 favorite ingredients. Have your guests or kids create their own and pop them into the oven for a few short minutes until they’re toasted and gooey.
Instead of making a dough and having to wait for it to rise, I used pita bread to cut the time drastically. This recipe will take you all of 15 minutes!
To keep these mini pizzas under 15 minutes, I used Mezzetta Pizza Sauce and I was very pleased! If you’re feeling extra handy and want to make your own heres a great recipe:

Any additional pita bread can be stored in the freezer up to 3 month to maintain best quality. Pull it out and place in the refrigerator 1 day prior to using it.
A few other topping you can add: peppers, diced chicken, olives, mushrooms, onions, sausage, tomatoes, etc.. the list goes on and on!
Quick & Easy Mini Pizzas
Ingredients
- 6 pita breads
- 3/4 cup of your favorite pizza sauce
- 1 1/5 cup shredded mozzarella
- 20 leaves of fresh basil
- pinch of red pepper flakes
- 2 tbsp grated parmesan
Instructions
- Preheat oven to 425 degrees F.
- Arrange pita bread on 2 large baking sheets (I fit 3 pita breads on each sheet). Place 2 tbsp of pizza sauce onto each pita bread and spread the sauce out using the back of the measuring spoon.
- Sprinkle cheese on top of the sauce on each pizza. (Now this is where you can add any additional toppings).
- Bake 8-10 minutes or until the cheese is melted and the crust is golden and crisp. Top them off with fresh basil. Sprinkle with red pepper flakes and parmesan. Slice and serve.
