Sautéed Broccolini With Sliced Almonds

Sautéed broccolini is one of the quickest and tastiest side dishes I’ve made. It’s cooked with olive oil and minced garlic in a non-stick pan and sprinkled with sliced almonds for a nice crunchy finish. (Jump to Recipe)

Sautéed Broccolini With Sliced Almonds

Broccolini has longer, thinner stalks compared to the original broccoli and almost an asparagus-like taste. It adds a pop of color to any meal your making, is nutrient-dense, and delivers crunch!

To Make This Broccolini Side Dish:

Add a splash of olive oil to a skillet over medium heat. Add the trimmed broccolini to the skillet along with garlic, salt, and pepper.

Let it cook for 2 minutes on one side. Flip the broccolini and cover it with a lid. Let it steam for 5 minutes or until the stem of the broccolini is tender.

Last, sprinkle the broccolini with toasted, sliced almonds and serve!

All of 14 minutes. It’s that easy and quick!

Baking/Roasting in the oven option:

Another favorite way to cook it is roasting it. I’m a huge fan of roasted veggies just because I use a sheet of parchment paper over a baking sheet. Once I remove the veggies and parchment paper from the sheet pan, it’s clean half the time and no need for washing! In my book, I call this amazing.

If you want to roast them in the oven, preheat the oven to 425 degrees F. Line a sheet pan with parchment paper. Lay out your broccolini. Drizzle 2 tbsp of olive oil. Sprinkle with 4 cloves of minced garlic, 1/4 tsp salt, and 1/4 tsp pepper. Place into the oven and bake for 10-12 minutes. Remove from oven a sprinkle with 2 tbsp of toasted, sliced almonds.

Baking time will always depend on your preference to how “well done” or “cooked through” you like your veggies (broccoli, asparagus, green beans, etc).

If you love your veggies really cooked, add an extra 2-4 minutes. If you love that fresh crunch, take them out about 2 minutes earlier. I found that 10-12 minutes cooked it perfectly almost every time for this veggie.

Ingredients

  • 8 oz broccolini ends trimmed
  • 2 tbsp olive oil
  • 4 cloves garlic, minced minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp toasted, sliced almonds

Instructions

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add the broccolini, garlic, salt and pepper. Cook for 2 minutes and flip the broccolini over.
  • Cover and let it steam for 5 minutes, or until the broccolini is tender. Sprinkle with sliced almonds and serve immediately.
