Sheet Pan Sausage And Roasted Veggies
The Oktoberfest celebrations aren’t quite over yet! What’s not to like about a good sheet pan dinner? Throw everything together on a sheet pan, lay the sausages on top of the veggies, and let the oven work the rest of the magic! (Jump to Recipe)

Prep time includes all of 10 minutes then the oven does the rest of the work.
Start off with quartering 1 onion, remove the skin and trim the ends. Remove the seeds from 2 red bell peppers and cut them into 1 1/2 inch squares. Your veggies are now prepped and need to be dressed.
Place all your prepped veggies including baby potatoes on a medium/large sized sheet pan, toss them with 3 tablespoons olive oil, 1 teaspoon garlic salt, 1/2 teaspoon Italian seasoning, and 1/4 teaspoon pepper until they are well coated.
Sometimes the baby potatoes are called new potatoes, baby dutch potatoes, or fingerlings. They are about the size of a dollar coin.)
Next, place the bratwursts on top of the veggies and a little spread out so they aren’t touching each other. Bake for 45 minutes and enjoy this sheet pan sausage and roasted veggies with a side salad or as is!

Ingredients
- 1 1/2 pounds baby potatoes
- 2 red bell peppers, cut into 1 1/2 inch squares
- 1 red onion, quartered
- 3 tbsp olive oil
- 1 tsp garlic salt
- 1/2 tsp Italian seasoning
- 1/4 tsp pepper
- 1 pound bratwursts
Instructions
- Preheat oven to 400 degrees F.
- Place all your prepped veggies on a medium/large sized sheet pan, toss them with olive oil, garlic salt, Italian seasoning, and pepper until they are well coated.
- Place the bratwursts on top of the veggies and a little spread out so they aren’t touching each other. Bake for 45 minutes. Enjoy this sheet pan dinner with a side salad or as is!
