Southwest Chipotle Chopped Salad
This Southwest Chipotle Chopped Salad is loaded with romaine, cabbage, carrots, pepitas, green onions, radishes, and avocado. Drizzled with a tangy southwest chipotle dressing. (Jump to Recipe)
This tex-mex salad has tangy, fresh flavor and is a great addition to a main meal like grilled chicken, enchiladas, or steak. Another great way to serve this salad is to toss in chickpeas or shredded chicken to make it into a main meal. I love eating this salad, with any protein I have on hand, on a warm summer evening.
To make this salad you will need:
- romaine lettuce
- cabbage
- green onions
- cilantro
- carrots
- radishes
- pepitas (shelled pumpkin seeds)
- avocado
- Tajin seasoning (chile lime seasoning)
- Southwest Chipotle salad dressing
To put this salad together:
Roughly chop the lettuce, cabbage, cilantro, and green onions. Chop the carrots and radishes into matchsticks. Throw all of the ingredients together until well combined in the southwest chipotle dressing. Pile on any add-on that sound delicious to you! Add more dressing, if needed.
This salad can be made and stored ahead of time. Up to 3 days but not more. Hold the avocado, pepitas, Tajin seasoning, and Southwest Chipotle salad dressing and toss in when getting ready to eat.
Southwest Chipotle Salad Dressing – Hidden Valley’s brand is the one I use here. There are a ton of great southwest dressings out there so pick one that you will love!
Tajin seasoning – This is a popular chile lime seasoning that most grocers carry. If you cannot find it, look for a seasoning that says “chile lime seasoning.” This seasoning is optional to put it in but it adds more flavor and zing!

Ingredients
- 1 head of romaine lettuce
- 1/2 head of cabbage
- 2 green onions
- 1/3 cup packed cilantro
- 2 medium carrots
- 4 radishes
- 1/3 cup pepitas (shelled pumpkin seeds)
- 1 avocado, peeled and diced
- 1/2 tsp Tajin seasoning (chile lime seasoning)
- 1/4 cup Southwest Chipotle salad dressing
Instructions
- Roughly chop the lettuce, cabbage, cilantro, and green onions. Transfer to a medium/large bowl. Chop the carrots and radishes into matchsticks. Transfer to the same bowl. Place the rest of the ingredients in the same bowl and toss together until well combined. Add more dressing, if needed.
