Something about a classic warm homemade dessert that gets me longing for cooler weather and slower evenings. And these mini apple crisps are no exception.
Think baked apple pie meets soft crumbly oatmeal cookie. There you have it. The best of both worlds.
To Make These Mini Apple Crisps:
In a large bowl, toss together peeled, cored, and sliced apples along with lemon juice and vanilla extract. This is your base. Divide the base among 4 mini ramekins or mini pie pans.
In another bowl, toss together old fashioned oats, brown sugar, cinnamon, and salt. Next, cut in cold butter and mix until the butter is well incorporated into the oats. This is your topping. Sprinkle this topping over the apple base.
Place the ready-to-bake ramekins onto a baking sheet and bake for 35 minutes. The tops with be slightly golden and your home will smell like apple pie. Once finished, remove from the oven and serve with a generous scoop of vanilla ice cream.
