Whipped Ricotta Toast With Pistachio And Lemon Thyme Honey
This fancy, yet simple, toast is smeared with a layer of creamy whipped ricotta, topped with toasted pistachios and drizzled with lemon thyme infused honey. (Jump to Recipe)
Start With The Bread
One of my all time favorite bread recipes to make is this Rustic Dutch Oven Bread. This is my go-to when I need a rustic, crunchy loaf of bread for soup, toast, and everything else under the sun. It takes minimal effort to make and a few hours of rising time (overnight is ideal).
If you aren’t making your own loaf, use a crusty artisan style loaf, such as french baguette, ciabatta, sourdough. You’re looking for something with a crusty, outside exterior.
Toast the bread slices inside a regular conventional toaster, inside the oven, or stovetop in a skillet just so the bread is warm and just barely crunchy.
Make The Whipped Ricotta
This part is not as complicated as it may sound.
Place the ricotta in a food processor and pulse for a minute until it picks up a creamy, light texture.
That’s all.
I’ve whipped the ricotta also using an immersion blender with a whisk attachment. It works. It’s light and fluffy and so perfect.
If these kitchen gadgets aren’t at your disposal, don’t sweat it. Use the ricotta as is from the tub. Results will still be yummy!
Infuse Honey With Lemon And Thyme
If you’ve tried my Prosciutto And Fig Goat Cheese Pizza or Blackberry Fig Crostini , you know all about the lemon thyme infused honey. It’s sweet and has hints of herby thyme and tangy lemon.
Absolutely perfect for drizzling a little sweet something on toasts, crostini, pizzas, oatmeal, or even salad!
To make it, whisk together fresh lemon juice, chopped, rinsed thyme, and sweet honey. Set it aside until ready to use.
Layer on the toasted bread with whipped ricotta, toasted pistachios, and lemon thyme honey. Sprinkle with a pinch of salt and pepper and serve immediately.
These whipped ricotta toasts can be served for breakfast, brunch, or a light lunch/dinner option. Either way, you can’t go wrong.

Whipped Ricotta Toast With Pistachio And Lemon Thyme Honey
Ingredients
- 2 tbsp honey
- 2 tsp fresh thyme, finely chopped
- 1 tsp lemon juice
- 3/4 cup whole milk ricotta cheese
- 2 slices rustic bread, toasted, 1-inch in thickness
- 1/4 cup shelled pistachios, toasted
- salt and pepper, for sprinkling (optional)
Instructions
- Whisk honey, thyme, and lemon juice together in a small bowl, set aside.
- Place ricotta in food processor and pulse for 30 seconds to a minute until light and fluffy.
- Smear whipped ricotta between the two bread slices. Sprinkle pistachios on top of the ricotta. Drizzle with lemon thyme honey. Sprinkle with salt and pepper. Serve immediately.
